Vegan Dinner


Last night I was very inspired to make a meatless meal after realizing how much meat I actually eat! I found this amazing recipe for cauliflower steaks on a bed of lentils (I added the sweet potatoes and brussel sprouts) from the BuzzFeed healthy eating challenge. I loved this meal so much that I am making it for my lunch all week! It is the perfect balance of everything and actually full of protein from the lentils to keep you full and energized!
