Acorn Squash Scramble🍳

Acorn squash and eggs are officially my new favorite combo…. This was ridiculously delicious. Last night I made chicken with acorn squash and we had lots of leftover squash so what do you do with leftover veggies? Put them in eggs! This is super filling and perfect for breakfast. I recommend eating it on or with whole wheat toast to complete the meal. Today I paired it with a super stuffed smoothie!

Squash Scramble:
1/2 cup cubed roasted acorn squash
1/4 cup chopped onions
Heaping handful spinach
2 egg whites
1 egg
Coconut oil

Heat a pan with coconut oil, once heated throw in onions and cook until golden. Add in squash and spinach and allow them to heat/wilt. Add in egg and egg whites, scramble till cooked, serve with 2 pieces whole wheat toast or a smoothie and enjoy!

Super Stuffed Smoothie:
1/2 banana
1 cup strawberries (halved)
3/4 cup coconut Greek yogurt
1 tbsp natural peanut butter
1/3 cup steel cut oats
3 tbs hemp hearts
1/2 cup almond milk
1 cup water

Throw everything in a blender, blend, Enjoy!
