Mason Jar Lunch Salad


As we all know right now mason jars are all the rage. From home décor to lunches the mason jar has taken the world by storm. Finally after many months of seeing all these beautiful salad creations, I created my own mason jar salad lunch! I did find this hard to eat straight out of jar so I would suggest pouring it into a bowl so everything can get mixed together and you don’t end up having to put your whole hand in the jar to reach the stuff at the bottom.

Citrus Avocado Chicken Salad:

1/4 cup chopped onions
1 mandarin orange
handful of raw broccoli (chopped)
1/3 avocado (diced)
1 chicken breast (cooked and shredded)
heaping handful of greens
1 tbs hemp hearts
1 oz halved pecans

1/2 tsp maple syrup
1 tsp lemon juice
1 tsp olive oil
1/2 tsp white wine vinegar
1 garlic clove (minced)
salt and pepper to taste

Start by whisking together salad dressing and pour it into the bottom of the mason jar. Next layer each item for the base starting with the onions then the orange then broccoli and so on until you reach the pecans to top it off. The ingredients list is in order so don’t worry nothing will get soggy! Pop the lid on your mason jar and place in the fridge until ready to eat.

When you are ready to eat your salad simply shake the jar to combine everything, pour into a bowl if you wish and enjoy!

do not over stuff your jar, if you pack everything in too tight then you will not be able to shake everything up and get the dressing on everything.
