Quinoa Pancakes and Berry Sauce🍓


Happy hump day! Because its Wednesday I was like hey why not make some pancakes. Unfortunately regular pancakes have absolutely ZERO nutritional value to them causing you to eat like 5 of them and then be hungry an hour later. To solve that little issue and to scratch the pancake itch I made these! Made with quinoa and egg whites, they pack 20g of protein per serving, are sweetened with bananas and for an added bonus go great with berry sauce. Start you day with these pancakes of wonder and the rest of the week will fly by!

Serves 1
Quinoa Pancakes:
1/2 cup cooked quinoa
2 egg whites
1/2 mashed banana
1/4 tsp cinnamon
1/4 tsp cocoa powder
1/4 tsp vanilla extract
Maple syrup (optional)

Whisk together mashed banana, egg whites and quinoa until the egg whites get frothy. Add in cinnamon, cocoa powder, vanilla and maple syrup. Keep whisking until you get a fluffy batter consistency (the “batter” will be pretty lose). Heat and medium skillet with coconut oil and cook each pancake until golden and cooked through. Top with berry sauce or any nut butter!

Berry Sauce:
1/4 cup frozen blueberries
1/4 cup raspberries
1/4 tsp honey
1 tbsp water

Add all ingredients into a small pot and bring to a boil. Turn the heat down and squish the berries with the back of a spoon to release their juices. Simmer while you cook your pancakes and most of the liquid is gone. Spoon over your pancakes and enjoy all the warm berry goodness!
