For some reason when December starts I crave pancakes like all the time. To fill my pancake craving this past Saturday I made these killer oat flour pancakes and topped them with almond butter and mushed warm raspberries. For the perfect post workout breakfast I had them with a bowl of Greek yogurt and a boiled egg for extra protein!
Oat Flour Pancakes:
1/2 cup oat flour
1/3 cup almond milk
1/2 tsp baking soda
1 tsp pure maple syrup
1/2 tsp cinnamon
Heat a medium skillet with coconut oil.
In a small bowl whisk together all ingredients until it forms a batter. Pour the batter to desired pancake size and cook on the first side until bubbles appear then cook the other side until golden brown and cooked through. Top with maple syrup, almond butter, fruit or ant of your favorite pancake toppings! Happy December!
