Gingerbread Energy Bites

Christmas may be over but my Christmas joy will live on until January 1! Keep your holiday spirit alive and healthy with these raw and vegan gingerbread bites of joy!

Gingerbread Energy Bites:
1/4 cup rolled oats
1 cup pitted dates
1/2 cup almonds
1 tsp cinnamon
1 1/2 tsp ginger
1/4 tsp cardamom
1/8 tsp nutmeg
1 tbsp maple syrup
1 tbsp chia seeds

Place all ingredients into a food processor and pulse until a thick and sticky “dough” forms. Once the dough has formed roll into desired sized balls and place in the fridge to set or eat right away! Keeps for up to 2 weeks in an airtight container in the fridge.
