Vegan Banana Pancakes πŸŒ

On Saturday morning I made these awesome vegan banana pancakes topped with blueberries, peanut butter, coconut shreds, maple syrup and pumpkin seeds for my sister and she absolutely loved them! Treat someone special to a wholesome breakfast this weekend with a stack of these!

Vegan Banana Pancakes:
3/4 cup oat flour
1 cup non-dairy milk
1 tbsp chia seeds
1 mashed banana
1 tsp vanilla
1/2 tsp cinnamon
Coconut oil for cooking

Whisk together all the ingredients and let the batter sit for about 5 min to allow the chia seeds to absorb some moisture and thicken the batter. Heat a medium skillet with coconut oil. Scoop desired amount of batter and cook until golden brown on each side. Serve pancakes with warm blueberries, nut butter, coconut shreds, maple syrup and pumpkin seeds. Serves 2.
