High protein and nutrient dense vegan salad. This salad hits all the macro nutrients you need in one meal as well as keeping you full and happy till your next snack or dinner!
Big Vegan Salad:
Diced orange pepper
Roasted sweet potato
4 slices marinated tofu or tempeh
1 tbsp tahini
2 tbsp lemon juice
1 tbsp water (+ more for thinning)
1 clove minced garlic
1 tsp nutritional yeast
Salt and pepper to taste
In a big bowl combine all the base ingredients. Whisk together the all the dressing ingredients except the hemp, basil and mint, and add more water until you have reached desired consistency. Pour dressing over the base, sprinkle hemp, basil and mint on top, toss and eat!
