Almond Butter Bliss Energy Balls:
20 organic pitted dates
1/4 cup natural almond butter
1/4 cup unsweetened shredded coconut
1/4 cup pumpkin seeds
3 tbsp hemp hearts
1/2 tsp cinnamon
2 tbsp honey
In a food processor place the shredded coconut, pumpkin seeds and hemp hearts chop them into small pieces (do not turn them into a seed butter by over processing!!). Add in the dates, almond butter and honey and blend until a sticky dough like consistency forms. Using a tablespoon roll the mixture into balls and store in an airtight container in the fridge for up to two weeks.
