These bars are PACKED, like actually stuffed with superfoods for the most filling and nutrient dense snack you will probably ever eat. Added bonus they are raw, gluten-free and can be made vegan with the replacement of maple syrup or agave for the honey. I always find it funny how everyone thinks that healthy food can’t look pretty or taste good, I promise you that with these bars I will change your whole view on “healthy food” and you will feel amazing!
Superfood Love Bars:
1 cup raw almonds
1/3 cup hemp hearts
1/4 cup chia seeds
1/3 cup pumpkin seeds
1/4 cup unsweetened shredded coconut
26 pitted dates (about 1 cup)
1 tsp cacao powder
1/4 tsp cinnamon
1 tsp organic local honey (sub maple syrup or agave for vegan version)
1 tbsp all natural almond butter
Blend all dry ingredients in a food processor until the almonds are chopped lightly. Add in the dates, cacao, cinnamon, honey and almond butter and blend until the mixture starts to stick together and everything is combined. In a parchment lined 9×9″ baking tray pour the mixture evenly around and press down firmly to even everything out and stick the bars together. Refrigerate for 2-3 hours before cutting into bars. Store in an airtight container in the fridge for up to two weeks.
