Mango Smoothie Parfait

Summer always brings tons of fresh and vibrant produce which is great inspiration when it comes to smoothies and bowls! We had a beautiful fresh ripe mango just sitting on the fruit basket that was literally calling my name and asking me to blend it into something delicious so obviously I did! I always love eating breakfast with my sister and letting her be my guinea pig when it comes to trying new recipes. The reviews she gave me on this one were outstanding and she told me that I must blog about it, so here it is!

Mango Smoothie Parfait:
Serves 1
Chia Layer:
1 1/2 tbsp chia seeds
1/4 cup unsweetened plain almond milk
1 tsp maple syrup (optional)

Mango Layer:
1/2 fresh mango
1 cup frozen mango
1/2 frozen banana
1 tbsp almond butter
1/4 tsp lacuma powder
1/4 tsp cinnamon
1/3 cup water

Toppings:
blueberries
coconut granola (home made or I use Nature’s Path Coconut Chia Granola )

Chia Layer: In the bottom of a mason jar (mine is a small 500ml one) stir together the chia seeds and almond milk and place in the fridge until set about an hour. Once set place a layer of blueberries on top and put back in the fridge while you make the mango layer.
Mango Layer: In a blender add in all the ingredients and blend until a smooth thick smoothie consistency is achieved. Pour half of the mango layer over the blueberries, add a layer of granola and then the other half of the mango mixture. To finish it off sprinkle a little granola on top and a few blueberries. Enjoy with your favorite breakfast buddy!*

Notes:
* To make enough for your breakfast buddy you will need to double the recipe.
– do not add tons more water when blending otherwise the smoothie will not be thick enough.
– the riper the mango the more flavorful your smoothie will be.
