I love experimenting with making different types of pizza crusts and all the cool ingredients you can substitute in to make your pizza extra nutritious. I have made cauliflower crust, quinoa crust and yesterday I experimented with chickpea flour crust. This crust is for sure the least similar to regular pizza crust because it ends up being more dense and almost bread like. It doesn’t form a crispy outer shell and becomes soft on the inside, it is the same texture throughout but is incredibly filling and high in protein. I really enjoy the nutty sort of flavor the chickpeas have because out of all the crusts this one has the most flavor. It also binds really well with few ingredients which also makes this crust incredibly quick and easy to make. I included what I used for my toppings below but any sort of toppings would work! You definitely will not be missing your usual pizza night pizza when you try this!
Chickpea Vegan Pizza Crust:
1 cup chickpea flour
1 cup water
1/4 tsp pink Himalayan salt
1/4 tsp Chili flakes (optional)
coconut oil for cooking
Heat a medium skillet with coconut oil on a low-medium temperature.
In a bowl measure the chickpea flour and water and whisk until a smooth lump free batter forms. Add in the salt and Chili flakes and whisk until fully combined. Once your skillet is hot pour the batter evenly to coat the entire surface of the pan. Allow it to cook on one side until the top starts to bubble and the edges look cooked. With a large spatula quickly flip the crust over and allow it to cook for another 2-3 minutes. Take the crust out of the pan and transfer onto a baking tray. Add your desired toppings and bake in a 450 degrees oven or until your toppings have cooked or if you use cheese then your cheese is melted. Serve warm but also travels really well and tastes great cold!
Homemade spinach pesto
1 small roasted yellow potato (slices)
1/4 cup diced onions and pepper
1 small tomato cooked to remove juices
Add everything on top of your pizza, cook in the oven for 5 minutes at 450 degrees. Sprinkle with nutritional yeast and enjoy!
