As the weather cools down our bodies will naturally shift and we will start craving warming and comforting foods. Large raw salads are super convenient for me but also are pretty tough on the digestive system and are not naturally craved by the body in cooler temperatures. Due to the type of digestive system I have it is very important that I shift towards warmer foods so I don’t get bloated and er- irregular… It also is kale harvesting time so this bowl features my fresh kale that took all summer to grow! Kick off the beautiful fall season and harvest with this warm comforting bowl of kale, cauli rice and chickpeas!

Kale Chickpea Cauli Rice Bowl
2 cups cauliflower “rice” (food processed cauliflower into rice like pieces)
3 cups chopped raw kale
2 cups cooked chickpeas
3 cloves garlic
2 tbsp lemon juice
2 tbsp olive oil
2 tbsp nutritional yeast
pink sea salt
roasted sweet potato fries
choice of protein
In a medium pot add the kale, cauliflower rice and about 1/4 cup of water. Cover with a lid, turn the heat up and allow them to steam for about 8-10 min or until all the water is boiled off. In a separate pot or large frying pan, heat up olive oil and add in the crushed or minced garlic cloves. Once the garlic is fragrant add in the chickpeas and saute for about 5 minutes on medium heat. Add in the steamed kale, cauliflower rice, lemon juice, salt, pepper and nutritional yeast. Mix everything together and allow to cook for about 5 minutes. Serve family style or plate into bowls with roasted sweet potato fries and additional protein if desired.
For the sweet potatoes, cut into 1/2 inch fries, cover with olive oil, salt, pepper and paprika. Roast in the oven at 400 degrees F for 30-40 min or until cooked through and browned on the outside.
